How to Prepare Walnut Soup

This recipe will not take you long at all. It’s actually why we love it so much. You can make it in 30 minutes!

The ingredients include:

  • 24 ounces of chicken broth
  • 1 cup of chopped walnuts
  • 2.5 tablespoons of onions, butter, and flour
  • 1/8 of a teaspoon of nutmeg
  • 1 cup of cream
  • 1/2 cup of milk (whole milk makes it creamier, but you can cut down on calories with 2%)

To get started, combine the chicken broth, walnuts, onions, celery, and nutmeg. Put it in a soup pot, and bring it to a boil. Reduce the heat on it and then simmer for a half hour.

After everything is softened, let it cool enough to be able to put it in a blender. When it is, place the mixture in a blender to puree it.

You will need to strain the contents of the blender to remove any particles that did not blend completely. The left over should be liquid.

To make it creamy, melt the butter in a pot and the put in the flour while whisking a little each time. Once the flour is in the pot, pour in the milk while also whisking. Bring this mixture to a boil, and then let it cook for one minute while stirring as much as possible. It will thicken, and that’s when you know it’s ready for the next step.

Pour the pureed mixture into the creamy base and stir. The last step is to add the cream and then heat it all up to a satisfactory temperature. You can add some parsley to the soup for those of you who like parsley.

This soup can be as thick or as thin as you would like. You can control the walnut flavor by adding more or less walnuts to the first step.

New Study Finds People with Peanut Allergies May Be Able to Eat Walnuts

With these results, researchers looked into the nutrients of walnuts to see what may be contributing to the difference in mood for young men. Some of the nutrients that could be making the difference are:

Hayley Thomas from the New Times SLO wrote a great article about our Heirloom walnuts!


Deanne was happy to point out that the moss—technically “lichen”—only grows where there is no trace of air pollution. Rattlesnakes, deer, and wild pigs are known to cut paths through the farm’s thick, adobe topsoil.

On this day, the orchard showed the first blush of spring life—green leaves emerging to meet the sun. Due to the ongoing drought, some foliage has died back in the orchard, but that’s to be expected.
