Roasted Rosemary Walnuts

Serves 6


  • 5 cups walnuts
  • 1/4 cup walnut oil
  • 1/4 cup fresh rosemary, coarsely chopped
  • 4 teaspoons kosher salt
  • 1 tablespoon granulated sugar
  • 2 teaspoons freshly ground black pepper


  1. Heat the oven to 350°F and arrange a rack in the middle.
  2. Place nuts on a baking sheet. Add remaining ingredients and mix with your hands to evenly coat.
  3. Bake until nuts are browned and toasted, stirring occasionally, about 20 minutes. Let cool on the baking sheet, transfer to a bowl, and serve.


Avocado Butter Crostinis

avocado_butter4_webBeautiful to look at and even better to eat. Plus, it’s simple. Need we say more?

4 ripe avocados or 16 oz. avocado pulp
2 T. lemon juice
1 1/2 tsp. salt
1 tsp. black cayenne pepper
1/2 cup walnut oil

Cut avocados in half. Scoop pulp into a food processor or blender. Add lemon juice, salt, black pepper and cayenne pepper. Process until smooth, making sure to scrape down the sides. Slowly drizzle in walnut oil and process until smooth. Chill for 1 hour.

Spread over your favorite roasted baguette slice or cracker and garnish with roasted red pepper, lemon and lime. Also great as a dip, butter replacement or spread for sandwiches.

Makes about 2 1/2 cups.
